Coconut macaroons were in the top 3 most popular cookies at my parents’ bakery. We all pretty much despised coconut and couldn’t figure out why

I planned on baking these, but my little daughter came down with something and 4 days of baby-with-fever pretty much took over my life
Fortunately, she is feeling better now, so I’ll be back on the PPQ wagon this week!
