  1. I loved this! I assumed it would be just like every other spiced pecan/goat cheese salad. Wrong! It was sooooo good. The only difference I did (didn’t post about it) was to throw the coated goat cheese rounds in a non-stick skillet for a few min. It warmed the cheese nicely.

  2. The goat cheese in this week’s challenge got me craving a slightly different salad; mine focuses on a few more fresh add-ins and a pomegranate vinaigrette instead of a balsamic.
